ravioli soup with quinoa and tomatoes

It’s the month of winter and we are in the USA and yesterday snow storm came. it’s different than fall and I see kids going to school buses outside and coming home and trees are filled with snow, looks like a white sheet outside. snow looks much nicer when it falls and trees look like it’s a white Christmas. I decided to make a nice soup that’s warm for the season.


1 cup of chopped onion.

2 cans of diced tomatoes.

1 tablespoon of chopped garlic.

1 teaspoon of salt.

2 tablespoons of basil pesto.

Half cup of quinoa


Take a deep pot and then add 3 tablespoons of olive oil and then add onions and garlic, cook it for 15 minutes and then add salt, pepper, and pesto then add half a cup of quinoa and cook it for 20 minutes then add 2 cans of chopped tomatoes and 3 cups of water, then cook it for 15 more minutes and then add ravioli and again cook it for 10 minutes. it turns out really good and delicious. it’s full of healthy ingredients. I used store-bought ravioli for soup.

Health benefits

onions are anti-inflammatory and good for the digestive system.

garlic is healthy for the heart and reduces cholesterol.

a little bit of salt a day is healthy for thyroid problems.

Tomatoes are a good source of lycopene and is heart healthy.

quinoa is a grain that has a good amount of fiber and protein.

The ravioli I used is made of flour good source of a few carbs for energy.
