soup with broccoli and peppers

Its almost the end of the month of October and Today’s weather looks much warmer. It’s a tropical front for the next 2 days. Halloween is nearby. watching pumpkin patches and pumpkin sellings in this month is normal. on the highway, I saw farmers selling pumpkins, lots of different kinds and colors. Halloween is a festive season, People decorate their homes and yards with scary puppets and decorations. On October 31 in night time neighborhood kids come to get candies. After reaching home we decided to go for walk in the evening. Walking in the neighborhood was great. after coming back I decided to make Broccoli soup with carrots and baby potatoes. we bought these ingredients from the store. this is the picture of my pumpkins from my veggie patch.

Half cup of onions.

1 cup of Broccoli.

1 cup of baby potatoes.

A teaspoon of ginger.

A teaspoon of garlic.

2 teaspoons of salt.

1 chili pepper.

2 carrots chopped.


Take a pot and add a tablespoon of olive oil then add ginger and garlic and add chopped vegetables and cook it for 10 minutes until golden brown. Then add 4 cups of water and cook it for 15 minutes. in the end add salt and pepper. it’s very simple and good, the vegetable broth tastes so good. very light for digestion and good. serve it with homemade bread.

Recipe for homemade bread

Take 3 cups of all-purpose flour and add dry yeast mixed with warm water. knead the dough and cover it with a kitchen towel for an hour then it all puffed up then knead it again and cover it up, do it 3 times then put it in bread loaf pans and cook it at 350 for 35 to 40 minutes until its golden brown in color. then eat it with soup.

Health benefits

The broccoli we used is full of vitamins A, C, and calcium, and potassium, and bioactive compounds that reduces inflammation. and protect against certain types of cancer. It’s good for healthy bones and eyes and the fiber present in it is good for the digestive system and helps to relieve constipation.

Potatoes are very versatile and easy to find. good source of healthy carbs, a good source of energy, and potassium and vitamins good for health. you can make them in many different ways.
