Its October 23 and almost evening time. Its raining outside and winter is arriving. we went outside in the daytime. Looks like the fall season. Yesterday we went for walk in the woods along the river. It’s very calming and refreshing. Lots of people were there and the path looks great. along the sides of the river, we sat on a bench and enjoyed the Autumn scenery. Trees were full of different colors. looks very beautiful. along the way the path was full of wildflowers and lots of Tree roots and when we reached the end we were climbing uphill, It was very steep, and the path was full of different shapes and sizes of stones, then on the way back, it was a steep downhill to reach near the end. It’s good mountain climbing and a breath of fresh air. when we reached inside the path of the forest it was more humid than the sides. we saw different kinds of plants and trees along the way. overall it was fun.
After reaching back home I decided to make a delicious meal with rice and bell peppers and Yellow Tomato puree from my Garden that I saved a few days ago. The peppers were very green and had different shapes and sizes. they are full of vitamins. I made tomato puree from yellow tomatoes and chili peppers and mint. it looks and tastes delicious and is very easy to make, full of fall flavor. By adding a dash of salt it turns out really good.

1 cup of rice.
1 cup of chopped bell peppers.
1teaspoon of salt.
1 teaspoon of black pepper.
Half a cup of chopped onions.
1 teaspoon of minced garlic.
Take a pot, add a teaspoon of olive oil and add chopped onions and garlic then cook it for 5 minutes add bell peppers and add rice, and 2 cups of water. mix them well and cook it for 15 minutes on medium to low heat. cover the pot while cooking. Then off the heat and put it in a nice bowl to serve. Before serving I will right a tomato puree recipe to serve on top of it to make it more healthy and flavorful.
Recipe for tomato puree
Take 2 cups of yellow cherry tomatoes and add 2 tablespoons of olive oil and 1 green chili and 1 teaspoon of salt and pepper then puree it and serve it with rice and bell pepper meal.
bell peppers are full of vitamin C, fiber, and antioxidants good to fight free radicals.
Tomatoes are a good source of vitamin C and lycopene, very heart-healthy.
Rice is a good source of selenium and carbs and minerals. good for health. gives energy for a workout.
