Quonoa with broccoli

Today is October 17, Monday. weather is very cloudy and leaves are falling outside. its fall season with the vibrant color of leaves. we went for hiking in the park yesterday. tiring but good. walking on the trail following the signs on the trees was fun at the end of the trail reaching near the waterfall was great., then walking back was good. it takes almost 3 hours to walk the trail from the beginning to the end. The trail was full of vibrant colors of leaves that fall on the way and looks awesome. some people crossed by saying hello were walking their dogs, an overall good workout, and walking in nature. coming back on the way home and watching beautiful fall colors was incredible. watching farmhouses with pumpkins of vibrant shapes and colors was good on the way back home.

on the way back home I was thinking about making something good and healthy. I opened my pantry and saw an ancient grain I bought called quinoa and broccoli in the refrigerator. I got a beautiful idea, how to make it delicious then I made a very healthy brunch, with Grain from ancient cultures which is a good and healthy source of protein. It’s quinoa with broccoli. I will right the recipe to follow.

Ingredients

one cup of quinoa.

Half cup of chopped onions.

A teaspoon of garlic.

A teaspoon of ginger.

2 tablespoons of pureed Tomatoes with green chili.

2 teaspoons of salt.

A teaspoon of Rosemerry and sage.

Tablespoon of olive oil.

Recipe

Take a pot put a tablespoon of oil in it and put it on the stove and put it on medium heat. Then add chopped onions, ginger, and garlic. cook it for 2 minutes then add 2 tablespoons of Tomato puree with green chili then mix it well and add one cup of quinoa and 3 cups of water and one cup of chopped broccoli. Add 2 teaspoons of salt and cook it for 20 minutes on low heat until the grain becomes soft and fluffy. mix the ingredients and serve it in abowlwitha dab of greek yogurt on it.it’s very healthy and nutritious.

Health benefits

quinoa is again used by the Inca civilization. it’s a staple food in South America. it’s very good for weight loss because of the high content of protein and amino acids. it’s gluten-free and has low glycemic value. it lowers cholesterol and improves digestion. it’s a good source of calcium and fiber.

Broccoli is a vegetable full of vitamins and minerals and bioactive compounds, full of fiber, vitamin C and calcium, and antioxidants. very good for health.

Greek yogurt is very healthy and full of probiotics that are good for the digestive system. I hope you guys will like my recipe and give comment on it.
