empnadas

Today is Sunday. its night time and very dark outside. Today day was stormy and cold. the weather changed very fast. I need to put other plants inside the basement to save some of them from cold weather. I think winter is coming soon. yesterday we made empanadas that are very delicious.

Ingredients

3 cups of all-purpose flour.

2 tablespoons of olive oil.

2 tablespoons of salt.

one tablespoon of pepper.

one and a half cups of lukewarm water.

one cup of mozzarella cheese.

one cup of cabbage shredded.

Recipe.

take one cup of warm water and add 3 tablespoons of sugar then add a packet of instant yeast. mix them well and add the water mixed with yeast in three cups of all-purpose flour. Mix it well then knead the dough and add more flour until the consistency is right. make a ball of dough and cover it with a towel then leave it for an hour until nice and fluffy, then knead the dough again and cut into 8 equal size pieces and make balls. then take a pastry roller and make a flatbread shape fill 2 tablespoons of cabbage and 2 tablespoons of mozzarella cheese in it. fold the dough and crimp the edges with a fork. then poke the empanada we make a few times with a fork to let the steam leave, make a few of them and then cook in the oven for 20 minutes at 350 degrees F. take them out when they are nice and cooked. Let them cool down and serve them with mint and tomato chutney.

Recipe to make mint and tomato chutney.

Take cup of mint leaves and add a cup of cherry tomatoes. one chili pepper, one-fourth tablespoon of salt half a cup of olive oil, and half a cup of chopped onions, and put them into a blender. make a smooth paste and ready to serve with empanadas.
