roti with okra

Its the first week of July and weather is sunny and hot.My pool is ready so kids can jumpin. I am wating for nice rain shower. Last night I made nice indian whole wheat roti and okra as side dish. we can serve it with kefir a probiotic drink.

Ingredients for making roti

2 cups of whole wheat flour.

one fourth cup of corn flour.

Take both kind of flour and put it in a bowl use clean water about half cup and add more if you need to make it the way you want. Add little by little to make a dough. knead it until its nice and smoth. keep it for half an hour.Then make small balls of dough and make a flat bread called roti with the help of pastry roller. Make few of them . Then warm nice flat pan and cook it on both sides . cook all of them using same method.

Ingredients to make okra sabji

one chopped onion.

1 teaspoon of salt

1teaspoon of pepper.

one tablespoon of mixed indian spice containing turmeric, ginger and garlic.

1 teaspoon of coriander powder.

1 pound of nicely diced okra.

Recipe

Take chopped onion and put 2 tablespoons of coconut oil and cook it until golden brown then add all the spice mix and mix it well. Then add finely diced okra and cookit on low heat for 15 mintes until nice and soft. off the heat . Add some flex seeds to add omega 3 benefits. Its ready to serve with roti. I would serve it with a very healthy probiotic drink made from yogurt called kafir.

Health benefits

whole wheat flour we use is full protein , fiber and vitamins. very good for health.

corn flour we mixed in is good source Zinc, Iron, vitamin A, caretonoids and fiber.

Okra is very healthy fullof vitamins and minerals. Vitamin c, vitamin K and antioxidant rich.kills free radicals that can damage cells.

Kafir is a probiotic drink full of vitamins and minerals and good for digestive system.
