It’s the month of June. Weather is really Nice and sunny . My trees are growing really well. it’s almost afternoon and I am thinking about making a nice snack for lunch. it’s healthy and really nutritious.


Ingredients
1 cup of grated zucchini.
1 cup of grated carrots.
Half cup of corn flour.
Half cup of Chick pea flour.
1teaspoons of salt.
1 teaspoon of pepper.
1 teaspoon of Flex seeds.
Recipe
Take a deep bowl add all the ingredients and mix them well by adding a half cup of water first and keep on mixing it and then add a half cup more slowly and keep on mixing it until we achieve the right consistency to make mini pancakes. then add one-fourth cup of olive oil in a pan, warm the oil and add a spoonful of mixed pancake mix. then cook it for a minute on medium heat and flip it on other side. cook it until it’s golden brown. make a nice batch to serve and eat.
We are going to make a sauce with it.
Ingredients
one-fourth cup of pureed Amaranth leaves.
one-fourth cup of mint leaves.
1teaspoon of salt.
1 teaspoon of pepper.
Half cup of low-fat organic yogurt.
put it in a blender and blend it well add some extra pepper to make it spicy and add some more salt according to your taste. I always use less salt because we can add more, in the end, the way we like. squeeze the juice of half lemon and mix it well. Add in a nice bowl to serve with the small pancakes we made.

carrots are full of beta-carotene and vitamin A and bioflavonoids that decrease the risk of tumors. good for immunity boost and improves the digestive system.
Mint is very good to improve digestion and is full of vitamins and anti-oxidants.
Zucchini is very good for the stomach. Reduces blood sugar level, full of antioxidants, full of vitamin A, potassium, vitamin K, magnesium, and fiber.
Chickpea flour is full of protein.
Corn flour is a good source of energy that we need in everyday life, full of iron, carotenoids, vitamin A and Zinc.
