Quinoa for lunch

Its almost afternoon and weather is so windy outside. Hard to sit outside. but warm and turning cloudy. I watered my plants on deck, than made a cup of tea with herbs . Then I decided to make quinoa with veggies. I think its a good choice for todays lunch.

Quinoa is a grain originated in Peru and Bolivia, India and Kenya . Its a ancient grain and full of nutrition and very healthy.good source of vitamins and minerals.

Recipe

1cup of quinoa.

1cup of thinly chopped broussel sprouts.

2 green chilies chopped.

teaspoon of sea salt.

Half teaspoon of pepper.

Half cup of chopped onion.

1teaspoon of minced garlic.

1 teaspoon of minced ginger.

take a pot, put 3 cups of water and add 1cup of quinoa. cook it on medium heat for 20 minutes until its nice and soft. then off the heat. we will prepare veggies and spices to mix it in. Take a pan add tea spoon of coconut oil then add chopped onions, ginger and garlic. Cook them for 5 minutes on low heat then add salt, pepper and chopped chilies and Brussel sprouts. mix them well and cook it for 10 minutes then mix them all in a pot we made quinoa. garnish it with a sprig of mint.

quinoa is super healthy. full of fiber, Protein and calcium and Iron, had no gluten. Good source of calcium, anti-oxidants and improves weightloss , heart healthy because it lowers cholestrol. Lowers diabetes and good source of Manganese and vitamin B and zinc and vitamin E. Quinoa is full of nutrition and health benefits.

Brussel sprouts are super healthy. protect against cancer cells, blood pressure, high cholesterol, heart disease and diabetes. full of anti oxidants, vitamin K, vitamin C, folate, and Protein and vitamin C. all the spices we used are good for digestive system and very healthy.
