Healthy lunch

It’s almost lunchtime and I am going to make excellent vegetarian lentil soup with rice. I mixed two kinds of lentils red and yellow. excellent source of protein, easy on the digestive system, and a good source of fiber. Today’s day is rainy and cloudy and hot lentil soup with plain rice is an excellent choice.


one cup of mixed lentils.

1cup of Basmati rice.

half cup of onion.

1 cup of chopped tomato.

1 tablespoon of grated ginger.

1teaspoon of garlic.

1teaspoon of turmeric.

1teaspoon of salt and pepper.

1teaspoon of cumin powder.

one teaspoon of coconut oil.

Take a pot and put lentils in it, Wash the lentils. then add 4 cups of water and boil it until they are cooked to perfection soft and soupy. Then take another pan , add a teaspoon of coconut oil add chopped onions, garlic, and ginger. Then add a teaspoon of cumin, turmeric and salt, and pepper. cook them until the mixture turned golden brown. then add chopped tomatoes,cook it for a few seconds and then add the mixture into the cooked lentil soup. it’s delicious and full of vitamins, fiber, and healthy vegetarian protein. Lentils are full of polyphenols, a good source of iron and magnesium, and folic acid. Serve it with cooked Basmati rice soft and fluffy. Good for mind and body. Take one cup of rice and 2cups of water and cook it on slow heat until nice and soft. Rice is a good source of energy and vitamins like vitamin B and A, diuretic, lowers blood pressure, and has anti-inflammatry properties, it lowers the blood sugar level in the body by slowing down the absorption of glucose in the body.
