Its almost afternoon and weather is very windy outside. Its getting cloudy and hopefully some rain will come. Water is good for spring season. Almost all the sprouts came out and we have to figure out the names that are wiped out due to water. It is almost April 22 and almost afternoon. we are surprised by the fact that weather change was so dramatic today. I see few flurries outside and have to pick up my planters from deck to save them from frost. I think todays lunch was awesome
and very light. I made tofu with kale and pickled lotus roots and bitter guard.
Its Asian and made of soya beans. It healthy and good source of vegetarian protein for vegans. Its good source of iron, calcium and manganese and phosphorous as vitamins also has copper, zinc and vitamin B1.
Take frozen tofu and thaw it and then cut in slices and sortie it in pan with drizzle of olive oil, salt and pepper. Turmeric and pepper and little bit of ginger powder. It takes 7 minutes to cook it and then its good to eat.
Kale is good leafy vegetable and good source of antioxidants quercetin and kaempferol .Its good source of vitamin c, Vitamin K, Vitamin B6, calcium and copper, magnesium and good for healthy habits and loosing weight.
Take washed and chopped kale sortie it in pan for 2 3 minutes with a pinch of salt and pepper. Its ready to eat.
Pickled lotus roots and bitter guard
Lotus roots are good source of vitamin C, Iron, potassium, copper, zinc and minerals. Its good source of dietary fiber. Its mainly grown in Asian countries and roots of water.
It’s a Asian vegetable and bitter to eat but good source of poly phenols. Its an anti-oxidant lowers inflammation and get rid of free radicals. Good for diabetics, vitamin A, vitamin C, potassium and zinc magnesium.
Then mix tofu, kale and pickled bitter guard and pickled lotus root and make a beautiful bowl to eat them. It looks awesome and good and healthy to eat.
