chick pea salad

It’s June 15 and a very nice hot summer day. The grass is green and a cool breeze is blowing. I think I am going to make a beautiful chickpea salad for brunch. it’s healthy and very nutritious and simple to make and a nice cup of lavender tea. I try to use organic as much as I can. organic is a key to healthy living. yesterday I went to the grocery store and bought organic chickpeas. we need to presoak them overnight to make them soft so they are easy to cook. chickpeas are eaten in India and middle east countries for a long time.

ingredients

2cup of boiled chickpeas.

1 teaspoon of sea salt.

1 teaspoon of pepper.

one-fourth cup of extra virgin olive oil.

juice of one big lemon.

half cup od chopped salary leaves.

1 cup of chopped red tomatoes

Recipe

take a cup of chickpeas, soak them in water overnight then next day boil them in a pressure cooker for 20 minutes. Take them out they are soft and ready for making a salad. mix all the ingredients and spices in a bowl gently so we won’t mush chickpeas. it’s that simple and easy to make. it’s healthy and very nutritious.

health benefits

chickpeas are full of protein, fiber and vitamins, folate and manganese, copper, selenium, and micronutrients. good for weight lose because we feel full after eating them for a few hours. A good source of calcium boost bone health if eaten regularly. they are low in calories and have a low glycemic index, which means good for managing diabetes.

The tomatoes we used are full of vitamin C, iron and vitamin A, and lycopene that’s heart-healthy.

celery leaves are very good for digestion and have antioxidants that kills cancer cells. celery leaves are loaded with nutrients and minerals and vitamin A, vitamin C, and B vitamins and improve memory.

lemon juice is full of Vitamin C and aids in digestion helps to clear skin and promotes weight loss.

so overall all the spices and ingredients we use to make today’s salad is super healthy. good food makes our mind and body feel better and healthy with a few minutes of yoga or walking every day. I hope you guys will like today’s recipe.
